Help, it's Friday....

last week's veggies still look fresher than anything you can find in the supermarket.

It's Friday morning. I actually love Fridays. The reason for "help"?  It's time to clear out the old and make space for the new. I'll be going to the farmer's market soon where I'll want to buy everything again (original post here), yet I have too many vegetables occupying my fridge. There's no way I'm going to the farmer's market and not buying everything all over again, so I'll have to find something to do with this stuff, quick. Roasted veggies always work. I chop up tomatoes, zucchini, onions and mushrooms. I grind garlic and rosemary in my mortar & pestle, add some salt for friction and when it's pulpy, some olive oil. I roast them on 425 until they look like this:

  They're really good. Hmmm, maybe a second batch? I can fill a square pan, I guess that's enough. I leave them on the counter and head out to the market.

 When I return from the farmer's market, the pan is empty. Was a lil tempted to take a picture of that, but I much prefer to photograph pretty things. Besides, I had 150 pounds of produce to wash and put away, and another batch of veggies to roast..

p.s. turns out, a certain someone purchased gold coins. seriously. i kid you not. someone else did not like owning gold coins and convinced first someone to sell them and purchase the camera he's been drooling over for all this time. now both someones get to enjoy the camera. whew.
