Gazpacho on a Whim

Too hot to cook inside when my a/c has formally cooked. Until the new one arrives, it's cold food or grilled food or both. My first attempt at gazpacho came out delicious. I'm hoping it's not beginner's luck, but then again, how bad can you mess up gazpacho? I take myself a tad too seriously....

Raw Gazpacho

  • 5 jumbo heirloom tomatoes
  • 2 kirby cukes
  • 1 large clove garlic
  • 5 sprigs parsley
  • 8 sprigs cilantro
  • 2 tablespoons extra virgin olive oil
  • sea salt
  • sliced red onion - for garnish
  • basil leaves - for garnish
Run your food processor and drop the garlic down the feed tube. Add parsley & cilantro. Chunk the tomatoes & cukes and process everything until smooth(ish). Add some olive oil & salt and pulse.
Pour into bowls. Add your garnish of choice and drizzle with a lil more olive oil.
