Japanese Carrot Dressing

Have you ever had a salad at a Japanese restaurant and wondered about the incredible combination of flavors? What's in it? Happened to me. So I went home and tried many recipes until I found the right one.
Now you won't have to....

  • 1 large carrot, peeled & shredded
  • 1/4 cup mirin (or sake)
  • 1/4 cup brown rice vinegar
  • 2 tablespoons tamari
  • 1 teaspoon toasted sesame oil
  • 1/4 cup chopped onions
  • 2 tablespoons mustard
  • 2 tablespoons fresh ginger - coarsely chopped

Combine ingredients in a food processor and process until very smooth.

This dressing pairs well with baby tatsoi, diced green apples, shredded radishes & shredded beets (yes, raw).
Scared to try baby tatsoi? (It's really delicious!) You can also use baby spinach or mixed greens.
