Brownie Cookies

Chewy Decadent Brownie Cookies

Mix the dry ingredients:
  • 1 cup spelt flour
  • 5 tablespoons cocoa
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1 1/2 tablespoons finely ground coffee

Mix the wet ingredients:
  • 3 tablespoons olive oil
  • 1/2 cup agave
  • 1 teaspoon vanilla
  • 1 egg white 
Combine all. Drop onto paper-lined cookie sheets.
Bake at 350 in a preheated oven for 12 minutes.

This is a tiny recipe. It's a serious cookie. Try to make them when nobody is home so that you can eat the whole tray and have time to make another double or triple batch. Expect a buzz. It's a lot of coffee.

Really good with Purely Decadent Coconut Milk Vanilla Bean Ice Cream and some fresh strawberries.

I'm blogging!?!?

My journey through life has taken me through many paths and people. Much joy and pain. So many of my personal experiences have been utilized to support others. With so many similar questions and concerns coming up I frequently feel like a broken record (do you know what that is?)

In light of this endless repetition, I have decided to go public.

I created this blog with the purpose of sharing information I have culled regarding health and wellness. Some of this will be food related. Alternative health options. Mental health support. General wellness.

This is a very new chapter for me. A little exposing. A little unsafe. I can't believe I'm doing this yet I believe it's the right thing to do.

Some things you can expect from me:
-the truth - I'm not so good at sugarcoating.
-answers to questions you may ask - including 'I don't know'
-information you can use to make positive changes in your life
